Just two weeks ago I had the bad case of the baking fever so I ended up making chocolate chip cookies. Because you know, sometimes you happen to have that itch to bring forth your inner Nigella and create awesome stuff for people to lavish praise upon. Rather unfortunately for me, these didn't quite turn out to be the warm soft cookies I was looking for. Maybe it was the fact that I halved the sugar. Oops. In my defence though, I did use 4 bars worth of Hershey's chocolate bars so that was pretty good.
I was too embarrassed to let these guys go out as gifts to my friends. Sorry guys, when I get better you will definitely get some.
Instead, they ended up staying at home to satisfy my cookie craving nonetheless. If you'd like to get cookies as massive as this just use an ice cream scoop, which makes it even easier anyway given how you can spare yourself the agony of rolling the dough.
Ugh. Any one else hate that part?
Recipe
1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
2 teaspoons vanilla extract
3 cups all purpose flour
1 teaspoon baking soda
2 teaspoons hot water
1/2 teaspoon salt
2 cups of semi-sweet chocolate chips / 4 bars of chopped good quality chocolate
- Cream together the butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Dissolve baking soda in hot water. Add to batter along with salt. Stir in flour, chocolate chips, and nuts. Drop by large spoonfuls onto ungreased pans.
